Stuffed Beets and Korean Style Beet

Stuffed Beets (Video 0-01:19)

Beets are known to contain vitamin A and carotenoids which help reduce premature aging. In addition, beets contain vitamin C, folate, fiber, potassium, manganese and iron. Their nutritional value also helps with brain function. In addition, the folate help reduce skin wrinkles. You can take one or two cups of beet juice every day.

Ingredients and How To Prepare:

  • 3-4 medium beets
  • Cut the bottom so beets lay properly
  • Wrap beets with foil
  • Bake for 50-60 minutes or until nice and tender 360F (180C)
  • Chop bunch of parsley
  • Mix 4 oz (115g) of grated cheese and chopped parsley
  • Season with salt and add some Black pepper
  • 1 tsp of lemon juice
  • Dig out a well in the center of each beet
  • Stuff with cheese mixture
  • Bake for 10 more minutes

Korean Style Beet (Video 01:19-02:22)

Ingredients and How To Prepare:

  • Grate 1.5lb (500g) of beet
  • 1/2 tsp of salt
  • 1.5 tsp of sugar
  • 1/2 tsp of black pepper
  • 1/4 tsp of red pepper
  • 1/2 tsp of paprika
  • 1/4 tsp of curry
  • 2 tsp of coriander
  • 2 tbsp of white vinegar
  • 6 sbsp of olive oil
  • 3-4 pressed cloves of garlic
  • Mix well, cover and leave in fridge for a night, and serve
